  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes in olive oil, cumin, paprika, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until tender and caramelized.
  4. While roasting, prepare the other ingredients: chop red bell pepper, dice avocado, and chop cilantro.
  5. In a large bowl, combine roasted sweet potatoes, black beans, red bell pepper, avocado, cilantro, and lime juice. Mix gently to combine.
