  • 1/2 cup pearled barley
  • 2 tablespoons unsalted butter
  • 2 tablespoons grapeseed oil
  • 1/2 cup thinly sliced shallots
  • 2 pounds zucchini, sliced
  • 2 bay leaves
  • 1/2 cup baby spinach
  • 1/4 cup parsley leaves
  • 1/4 cup whole milk plain yogurt
  • Grated lemon zest for topping

Instructions

  1. Rinse the pearled barley under cold water. In a large pot, combine barley with enough water to cover it by about an inch. Add salt and bring to a boil. Reduce heat and simmer for about 30 minutes until tender.
  2. In another pot, heat butter and oil over medium heat. Sauté shallots until soft (about 5 minutes). Add zucchini slices, bay leaves, coriander seeds, salt, and pepper; cook for another 10 minutes until tender.
  3. Drain excess water from the cooked barley if needed. Add it to the sautéed vegetables along with enough broth or water to achieve your desired consistency.
  4. Stir in baby spinach and parsley; let wilt for about 5 minutes.
  5. Remove from heat, stir in yogurt, drizzle with olive oil, and finish with grated lemon zest before serving.
