Ingredients
- 1/2 cup pearled barley
- 2 tablespoons unsalted butter
- 2 tablespoons grapeseed oil
- 1/2 cup thinly sliced shallots
- 2 pounds zucchini, sliced
- 2 bay leaves
- 1/2 cup baby spinach
- 1/4 cup parsley leaves
- 1/4 cup whole milk plain yogurt
- Grated lemon zest for topping
Instructions
- Rinse the pearled barley under cold water. In a large pot, combine barley with enough water to cover it by about an inch. Add salt and bring to a boil. Reduce heat and simmer for about 30 minutes until tender.
- In another pot, heat butter and oil over medium heat. Sauté shallots until soft (about 5 minutes). Add zucchini slices, bay leaves, coriander seeds, salt, and pepper; cook for another 10 minutes until tender.
- Drain excess water from the cooked barley if needed. Add it to the sautéed vegetables along with enough broth or water to achieve your desired consistency.
- Stir in baby spinach and parsley; let wilt for about 5 minutes.
- Remove from heat, stir in yogurt, drizzle with olive oil, and finish with grated lemon zest before serving.
