  • 1 lb boneless chicken breast, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. In a bowl, season the chicken with salt, pepper, and soy sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok over high heat. Cook the chicken for about 4-5 minutes until fully cooked. Remove from pan.
  3. In the same wok, add another tablespoon of oil and sauté garlic and ginger for about 30 seconds.
  4. Add carrots and broccoli; stir-fry for about 2 minutes until vibrant but crisp.
  5. Incorporate bell peppers and snap peas; continue stir-frying for another 2 minutes.
  6. Return the chicken to the wok and add remaining soy sauce, oyster sauce, and sesame oil. Mix well.
  7. Pour cornstarch mixture into the center of the wok and stir until thickened (about a minute).
  8. Toss everything together and garnish with green onions and sesame seeds before serving hot over rice or noodles.
