  • 1 cup chocolate cookie crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz dark chocolate (70% cocoa or higher), chopped
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup fresh blackberries, halved (plus extra for topping)
  • 2 tsp agar-agar powder
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Mix chocolate cookie crumbs and melted butter; press into the bottom of a springform pan.
  2. Melt dark chocolate in a microwave or double boiler and let cool slightly.
  3. Blend cream cheese and sugar until smooth; mix in vanilla extract and melted chocolate.
  4. Fold in half of the blackberries and prepare agar-agar according to instructions; mix into cheesecake filling.
  5. Pour filling over crust, top with reserved blackberries, and refrigerate for at least 4 hours or overnight.
