  • 4 ounces dark chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  2. In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
  3. Beat softened butter and sugar until fluffy; then add eggs one at a time and vanilla.
  4. Gradually incorporate dry ingredients into the butter mixture, alternating with buttermilk.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes until set. Cool completely on a wire rack.
  6. Puree raspberries with sugar for the mousse; whip cream until soft peaks form.
  7. Fold melted dark chocolate into whipped cream along with raspberry puree; chill for about 30 minutes.
  8. Slice the cooled cake in half horizontally; layer mousse between and on top of the two halves.
  9. Prepare ganache by pouring heated cream over chopped dark chocolate; drizzle over the chilled cake before serving.
