  • 4 tablespoons melted butter
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup sour cream
  • 8 oz dark chocolate, melted
  • 3 large eggs
  • 1 ½ cups cherries, pitted

Instructions

  1. Prepare the cherry compote by simmering cherries with sugar and water until soft. Thicken with cornstarch slurry and let cool.
  2. Preheat oven to 325°F (163°C). Combine cookie crumbs, melted butter, and sugar; press into a springform pan and bake for 10 minutes.
  3. Beat cream cheese until smooth; add sugars, sour cream, vanilla extract, and melted chocolate. Mix eggs one by one until just combined.
  4. Pour half the batter over the cooled crust; dollop half the cherry compote on top and swirl. Repeat with remaining batter and compote.
  5. Bake in a water bath for about 50–60 minutes until edges are set but center jiggles slightly. Cool gradually in the oven.
  6. Chill in the refrigerator for at least six hours or overnight before serving.
