  • 67 medium Yukon Gold potatoes, thinly sliced
  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or more sharp cheddar)
  • ¼ cup grated Parmesan cheese
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Arrange potato slices and onion in slanted rows in the dish.
  3. In a saucepan over medium heat, melt butter. Whisk in flour gradually while adding almond milk until smooth; simmer until thickened.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until melted and combined.
  5. Pour the cheesy sauce over the potatoes and onions.
  6. Cover with foil and bake for about 45 minutes.
  7. Remove foil, sprinkle Gruyere and Parmesan on top, then bake uncovered for another 30-45 minutes or until golden brown.
