Ingredients
- 6–7 medium Yukon Gold potatoes, thinly sliced
- ½ white or yellow onion, sliced
- 2 tablespoons salted butter
- ¼ cup all-purpose flour
- 1 ½ cups unsweetened almond milk
- 8 ounces sharp cheddar cheese, shredded
- ½ teaspoon garlic powder
- ¾ teaspoon salt
- Freshly ground black pepper
- ½ cup Gruyere cheese (or more sharp cheddar)
- ¼ cup grated Parmesan cheese
- Fresh chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Arrange potato slices and onion in slanted rows in the dish.
- In a saucepan over medium heat, melt butter. Whisk in flour gradually while adding almond milk until smooth; simmer until thickened.
- Stir in cheddar cheese, garlic powder, salt, and pepper until melted and combined.
- Pour the cheesy sauce over the potatoes and onions.
- Cover with foil and bake for about 45 minutes.
- Remove foil, sprinkle Gruyere and Parmesan on top, then bake uncovered for another 30-45 minutes or until golden brown.
