Ingredients
- 8 skinless chicken thighs
- 1 garlic clove
- 400ml coconut milk
- 2 tablespoons yellow curry paste
- 500g cooked rice
- Fresh coriander leaves
- Lime juice
- Salt
- Black pepper
- Olive oil
- Crispy fried onion
- Chilli oil
- 2 limes
- 0.5 sugar
- 300ml water
Instructions
- Marinate the chicken by mixing grated garlic and half the oyster sauce in a bowl. Season with salt and pepper, then set aside.
- In a saucepan, heat a splash of coconut milk, add curry paste and coriander stalks, then stir in water and remaining coconut milk. Simmer for 10-15 minutes.
- In a frying pan, heat oil and cook marinated chicken until charred and cooked through.
- Assemble by dividing rice into bowls, topping with broth and sliced chicken, garnishing with lime juice, crispy onions, and fresh coriander.
