  • 8 cups shredded cabbage
  • 3 green onions, sliced
  • 1/2 cup thinly sliced red onion
  • 12 cups shredded carrots
  • 1/2 cup chopped cilantro
  • 3 tablespoons vegetable oil
  • 2 teaspoons sesame oil
  • 1/4 cup rice vinegar
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 2 teaspoons grated ginger
  • 1/4 teaspoon chili flakes
  • Salt and pepper to taste
  • Crushed peanuts for topping
  • Toasted sesame seeds for topping

Instructions

  1. In a large mixing bowl, combine the shredded cabbage, green onions, red onion, shredded carrots, and chopped cilantro.
  2. In a small bowl, whisk together vegetable oil, sesame oil, rice vinegar, honey, soy sauce, minced garlic, grated ginger, chili flakes, salt, and pepper until well blended.
  3. Pour the dressing over the slaw mixture and gently toss until all ingredients are evenly coated.
  4. Just before serving, sprinkle crushed peanuts and toasted sesame seeds on top for an extra crunch.
