  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg
  • 1 & 1/4 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/8 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter chips
  • 1/4 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, combine the all-purpose flour, rolled oats, cinnamon, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Gently fold in the chocolate chips, peanut butter chips, and toffee bits.
  5. Using a cookie scooper, portion out dough balls onto the prepared baking sheet. Bake for 11–12 minutes until golden around the edges but still soft in the center.
