- 1 1/2 pounds boneless skinless chicken breasts
- 1 cup frozen corn
- 2 ā 10 ounce cans fire roasted tomatoes and green chiles
- 2 ā 15 ounce cans cannellini beans
- 1/2 cup buffalo sauce
- 2 cups low sodium chicken broth
- 4 oz cream cheese (room temperature)
- 4 oz blended cottage cheese
Instructions
- Prepare the slow cooker by adding all ingredients except cream cheese and cottage cheese. Stir well and cover.
- Cook on low for 4-6 hours or high for 3-4 hours until the chicken is fully cooked.
- Shred the chicken using two forks or a hand mixer and return it to the slow cooker.
- Stir in cream cheese until smooth, then add shredded chicken back in and cook on low for another 30 minutes.
- Finally, stir in blended cottage cheese before serving. Adjust seasoning to taste.
