Description

Crockpot Buffalo Chicken Chili is a deliciously hearty dish that combines tender chicken with a zesty blend of spices. This one-pot meal is not only easy to prepare, but it also offers the perfect balance of flavor and nutrition, making it ideal for weeknight dinners or meal prep.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 cup frozen corn
  • 2 – 10 ounce cans fire roasted tomatoes and green chiles
  • 2 – 15 ounce cans cannellini beans
  • 1/2 cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz blended cottage cheese

Instructions

  1. Prepare the slow cooker by adding all ingredients except cream cheese and cottage cheese. Stir well and cover.
  2. Cook on low for 4-6 hours or high for 3-4 hours until the chicken is fully cooked.
  3. Shred the chicken using two forks or a hand mixer and return it to the slow cooker.
  4. Stir in cream cheese until smooth, then add shredded chicken back in and cook on low for another 30 minutes.
  5. Finally, stir in blended cottage cheese before serving. Adjust seasoning to taste.
