Ingredients
- 2 slices turkey bacon
- 1 large yellow onion (diced)
- 1 cup carrots (thinly sliced)
- ¾ cup celery (diced)
- 1 tsp salt
- 1½ tsp black pepper
- 4 tsp garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp dried parsley
- 1 tbsp tomato paste
- 2 (15 oz) cans crushed tomatoes
- 2 (15 oz) cans cannellini beans (drained and rinsed)
- 4 cups low sodium chicken broth
- 6 cups water
- 1 (16 oz) box of ditalini pasta (uncooked)
- 1 cup Parmesan Reggiano (for serving)
Instructions
- In a large skillet over medium heat, cook turkey bacon until crispy. Drain and slice; add to slow cooker.
- Combine diced onion, sliced carrots, diced celery, garlic, crushed tomatoes, cannellini beans, broth, water, tomato paste, salt, pepper, thyme, basil, and parsley in the slow cooker.
- Stir well and cover. Cook on low for 7–8 hours or high for 4–5 hours.
- Thirty minutes before serving, stir in uncooked ditalini pasta.
- Serve hot with grated Parmesan cheese on top.
