  • 2 slices turkey bacon
  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • 1 cup Parmesan Reggiano (for serving)

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy. Drain and slice; add to slow cooker.
  2. Combine diced onion, sliced carrots, diced celery, garlic, crushed tomatoes, cannellini beans, broth, water, tomato paste, salt, pepper, thyme, basil, and parsley in the slow cooker.
  3. Stir well and cover. Cook on low for 7–8 hours or high for 4–5 hours.
  4. Thirty minutes before serving, stir in uncooked ditalini pasta.
  5. Serve hot with grated Parmesan cheese on top.
