Ingredients
- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- 1/4 cup olive oil (or beef tallow/ghee)
- 1/4 teaspoon freshly cracked black pepper
- 1 whole head of garlic
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon flakey sea salt for finishing
Instructions
- Preheat oven to 450°F with a large roasting pan inside.
- Rinse potatoes under cold water; place in a stock pot with cold water, salt, and baking soda. Bring to a boil and cook until fork-tender (about 25 minutes). Drain and let dry.
- Remove the hot roasting pan from the oven, add olive oil, and heat until melted.
- Rough up the edges of the dried potatoes in a colander, then add to the pan and toss to coat in oil. Season with salt and pepper; nestle in the head of garlic cut-side down.
- Roast for about 55-60 minutes, tossing every 20 minutes until golden brown and crispy.
- Remove roasted garlic, mash with chopped rosemary and olive oil in a bowl, then toss with potatoes before returning to the oven for an additional 5 minutes.
