  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 tsp garlic powder
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup olive oil (for frying)
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill or mint, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In one bowl, whisk the eggs until frothy. In another bowl, combine flour, garlic powder, oregano, paprika, salt, and pepper.
  3. Dredge each chicken piece in the egg mixture first, then roll in the flour mixture until fully coated. Place on the prepared baking dish.
  4. Heat olive oil in a skillet over medium heat. Fry the chicken tenders in batches for about 3 minutes per side until golden brown.
  5. Transfer fried tenders back to the oven for an additional 10 minutes to ensure they are cooked through and crispy.
  6. While baking, mix Greek yogurt with grated cucumber, lemon juice, and herbs for the tzatziki sauce.
