- 2 large eggs
- 1/4 cup olive oil (for frying)
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 tbsp lemon juice
- 2 tbsp fresh dill or mint, chopped
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In one bowl, whisk the eggs until frothy. In another bowl, combine flour, garlic powder, oregano, paprika, salt, and pepper.
- Dredge each chicken piece in the egg mixture first, then roll in the flour mixture until fully coated. Place on the prepared baking dish.
- Heat olive oil in a skillet over medium heat. Fry the chicken tenders in batches for about 3 minutes per side until golden brown.
- Transfer fried tenders back to the oven for an additional 10 minutes to ensure they are cooked through and crispy.
- While baking, mix Greek yogurt with grated cucumber, lemon juice, and herbs for the tzatziki sauce.
