  • 1 12 to 18 ounce package shelf-stable potato gnocchi
  • 1 pound hot or sweet Italian turkey sausage (casings removed if links)
  • 3 large shallots (or 1 onion, finely chopped (about 1 cup))
  • Kosher salt and freshly ground black pepper (to taste)
  • 5 garlic cloves (minced (about 1 1/2 tablespoons))
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup dry apple cider vinegar
  • 2 cups (15oz can) canned pumpkin (unsweetened)
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup mascarpone cheese (or cream cheese)
  • 1/2 cup grated Parmesan cheese (for serving)

Instructions

  1. Preheat the oven to 275ºF.
  2. In a large skillet, heat half the olive oil over medium heat and cook the turkey sausage until browned.
  3. Add chopped shallots; sauté until softened. Stir in garlic and red pepper flakes.
  4. Deglaze with apple cider vinegar and let simmer.
  5. Stir in canned pumpkin and stock; bring to a simmer.
  6. Reduce heat, mix in mascarpone until melted, and season with salt and pepper.
  7. In another skillet, heat remaining oil; fry gnocchi in batches until crispy on both sides.
  8. Combine crispy gnocchi with the pumpkin sauce; serve hot topped with grated cheese.
