  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 5 tablespoons butter
  • 3 (8-oz. packages) cream cheese (room temperature)
  • 1 & 1/3 cups sugar
  • 1 tablespoon vanilla bean paste
  • 1/4 teaspoon salt
  • 1 & 1/2 cups heavy cream
  • 10 large egg yolks
  • 23 tablespoons superfine sugar (for torching)
  • Raspberries (to garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed gingersnaps, sugar, and salt. Mix in melted butter and press into a springform pan.
  3. Beat cream cheese until smooth; gradually add sugar, vanilla paste, and salt. Blend in heavy cream.
  4. Incorporate egg yolks one at a time until well mixed.
  5. Pour filling over the crust and bake for approximately 105 minutes until set.
  6. Chill for at least 4 hours or overnight before caramelizing the top with superfine sugar using a kitchen torch.
