  • 1 cup cubed pineapple
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Garnish: sliced green onions and sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown (6-8 minutes). Set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened (about 5 minutes). Stir in cubed pineapple for an additional 2 minutes.
  3. Add jasmine rice, chicken broth, soy sauce, and grated ginger; season with salt and pepper. Bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  4. Return cooked chicken to the skillet and stir everything together. Serve garnished with sliced green onions and sesame seeds.
