  • 8 oz penne pasta
  • 1 lb boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, drained and chopped
  • 1 tsp garlic powder
  • ½ tsp crushed red pepper flakes (optional)
  • 2 tbsp butter
  • Fresh parsley or basil, for garnish

Instructions

  1. Boil salted water in a large pot and cook the penne pasta until al dente. Add broccoli florets during the last two minutes of cooking. Drain both.
  2. Season the chicken with salt, pepper, Italian seasoning, and smoked paprika. Sear in a large skillet with olive oil until golden brown and cooked through; remove from the pan.
  3. In the same skillet, melt butter and sauté garlic and sun-dried tomatoes until fragrant. Stir in heavy cream and chicken broth, then gradually mix in cheeses until melted and smooth.
  4. Combine cooked pasta, broccoli, and chicken into the sauce; toss gently to coat.
  5. Garnish with fresh parsley or basil before serving.
