  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (finely minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F.
  2. Butter a baking dish and set aside.
  3. Salt the zucchini slices and let them rest for 15 minutes to draw out moisture, then wipe off excess salt.
  4. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  5. Melt butter in a saucepan over medium heat; sauté garlic until fragrant (about 20 seconds).
  6. Combine the cream mixture with the garlic in the saucepan and stir until bubbling; add half of the mozzarella cheese until melted.
  7. Pour the creamy sauce over the arranged zucchini slices in the baking dish; top with remaining cheeses.
  8. Bake for 18-22 minutes until golden brown and bubbly.
  9. Allow to cool for 5-10 minutes before serving.
