This rich and comforting Italian Sausage Soup is the perfect cozy dinner. Made with flavorful Italian sausage, ditalini pasta, creamy Parmesan cheese, and a touch of fresh basil, it’s a satisfying one-pot meal that’s quick enough for busy weeknights but indulgent enough for company.
Ingredients
- 1 lb Italian sausage
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
- 1 can (14.5 ounces) petite diced tomatoes, undrained
- 8 ounces ditalini pasta
- 8 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (for garnish)
Instructions
In a large Dutch oven or soup pot, brown and crumble the Italian sausage over medium heat until fully cooked. Drain excess grease.
Add the diced onion, Italian seasoning, salt, and pepper. Sauté for 1–2 minutes until the onions begin to soften.
Stir in the minced garlic and cook for another minute until fragrant.
Pour in the diced tomatoes (with juices) and chicken broth. Add the ditalini pasta and ensure it’s submerged in the broth.
Bring the mixture to a boil and cook for about 8 minutes, or until the pasta is al dente.
Reduce the heat to medium. Stir in the softened cream cheese and Parmesan cheese. Continue cooking, stirring often, until the cream cheese is fully melted and the soup is creamy—about 5 minutes.
Ladle into bowls and garnish with freshly chopped basil before serving.
