  • 1 lb chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp vegetable oil or ghee
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder or garam masala blend
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp cayenne (adjust for heat)
  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 cup tomato puree
  • 1 cup chicken broth
  • Juice of lime
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat vegetable oil in a heavy-bottom pot over medium heat. Sauté chopped onion until translucent (5-7 minutes). Add garlic and ginger; cook for another minute.
  2. Stir in curry powder, turmeric, cumin, and cayenne; toast for one minute.
  3. Add chicken pieces; season with salt and pepper. Cook until browned on all sides (5-8 minutes).
  4. Pour in coconut milk, tomato puree, and chicken broth. Stir to combine and bring to a gentle simmer.
  5. Partially cover and simmer on low heat for about 20-25 minutes until chicken is cooked through.
  6. Remove from heat and stir in lime juice before serving hot over rice garnished with fresh cilantro.
