- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp cayenne (adjust for heat)
- Salt and pepper to taste
- 1 can (14 oz) coconut milk
- 1 cup tomato puree
- 1 cup chicken broth
- Juice of lime
- Fresh cilantro, chopped for garnish
Instructions
- Heat vegetable oil in a heavy-bottom pot over medium heat. Sauté chopped onion until translucent (5-7 minutes). Add garlic and ginger; cook for another minute.
- Stir in curry powder, turmeric, cumin, and cayenne; toast for one minute.
- Add chicken pieces; season with salt and pepper. Cook until browned on all sides (5-8 minutes).
- Pour in coconut milk, tomato puree, and chicken broth. Stir to combine and bring to a gentle simmer.
- Partially cover and simmer on low heat for about 20-25 minutes until chicken is cooked through.
- Remove from heat and stir in lime juice before serving hot over rice garnished with fresh cilantro.
