  • 1 lb boneless skinless chicken breasts
  • 12 oz linguine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Cook linguine in a large pot of salted boiling water until al dente (9-11 minutes). Reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning until golden and fully cooked (6-8 minutes per side). Set aside.
  3. In the same skillet, melt additional butter, sauté minced garlic for one minute, then stir in heavy cream and milk. Bring to a gentle simmer.
  4. Add Velveeta, mozzarella, and Parmesan cheeses; stir until melted and sauce is smooth. Adjust seasoning with salt and pepper.
  5. Toss cooked linguine in the sauce until well coated. Serve topped with seared chicken.
