  • 1 lb boneless, skinless chicken breasts
  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • Cajun seasoning
  • Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook rotini in salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning, Italian seasoning, salt, and pepper. Sear in olive oil over medium-high heat for about 4-5 minutes on each side until golden brown; remove from skillet.
  3. In the same skillet, sauté minced garlic in butter until fragrant.
  4. Add heavy cream and stir in Velveeta cubes until melted; then mix in mozzarella and Parmesan until smooth. Adjust thickness with reserved pasta water if needed.
  5. Toss cooked rotini with the Alfredo sauce until well coated; simmer for 2 minutes.
  6. Serve by plating creamy rotini alongside seared chicken; garnish with fresh parsley if desired.
