  • 2 cups Yukon Gold potatoes, diced
  • 2 cups fresh broccoli florets
  • 1 cup carrots, diced
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese, grated
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 tbsp agar-agar

Instructions

  1. Wash and chop the potatoes into cubes, broccoli into florets, and dice the carrots.
  2. Optionally sauté onions in a skillet with a splash of vegetable broth until translucent.
  3. In your crockpot, combine all ingredients: potatoes, broccoli, carrots, sautéed onions (if used), garlic powder, and enough vegetable broth to cover.
  4. Cover and cook on low for about 6 hours or until everything is tender.
  5. Blend some of the soup with an immersion blender until creamy but still chunky.
  6. Stir in grated cheddar cheese and agar-agar according to package instructions before serving.
