Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tbsp oil (vegetable or coconut)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red curry paste
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tsp chili flakes, adjust to heat preference
- 1 can (14 oz) full-fat coconut milk
- 1 cup beef broth
- Salt and pepper, to taste
- Juice of 1 lime
Instructions
- Heat oil in a large pot over medium-high heat. Brown the beef cubes in batches until well-seared on all sides. Remove and set aside.
- In the same pot, sauté onion, garlic, and ginger until onions are translucent.
- Add red curry paste, cumin, turmeric, and chili flakes; cook until fragrant.
- Return beef to the pot and add coconut milk and beef broth. Stir well.
- Bring to a simmer, then reduce heat to low. Cover and cook for 2-3 hours until beef is tender.
- Before serving, stir in lime juice and season with salt and pepper.
