  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • 2 cups all-purpose flour
  • 1/2 cup plain yogurt
  • 1/4 cup warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder

Instructions

  1. Heat oil in a cast iron pot over medium heat. Brown cubed beef for 5-7 minutes.
  2. Add chopped onion, minced garlic, and grated ginger; sauté until translucent (3-4 minutes).
  3. Stir in spices and cook for another minute until fragrant.
  4. Pour in coconut milk, beef broth, chickpeas, and tomato paste; season with salt and pepper. Bring to a boil, reduce heat, cover, and simmer for 30-40 minutes until beef is tender.
  5. For the naan, mix flour, baking powder, sugar, yogurt, and warm water into a soft dough; let rest for 15 minutes before rolling out.
  6. Cook naan on a skillet over medium-high heat for 2-3 minutes on each side until golden brown.
