  • 10 oz cherry tomatoes (sliced in half)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1.5 lb chicken breast (2 skinless, boneless breasts)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 8 oz pasta (bow-tie, penne, or fusilli)
  • 1/4 cup basil pesto
  • 1/2 cup heavy cream
  • For garnish: 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss sliced cherry tomatoes with olive oil and minced garlic; spread in a casserole dish and roast for about 20 minutes.
  2. Slice chicken breasts horizontally; season with salt, pepper, and paprika.
  3. Heat olive oil in a large skillet over medium-high heat; cook chicken for about 5 minutes per side until fully cooked. Remove and slice thinly.
  4. Boil water in a pot; add pasta and cook until al dente. Drain.
  5. In the same skillet used for the chicken, combine cooked pasta, basil pesto, and heavy cream over low heat until well mixed.
  6. Serve topped with sliced chicken and roasted tomatoes.
