Ingredients
- 1 (14 or 16 oz.) package broccoli florets
- 1 cup shredded mild or medium cheddar cheese, divided
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1/4 cup mayonnaise
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/8 tsp. salt
- 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
- 1/4 cup butter, melted
Instructions
- Thaw broccoli if frozen, warm in the microwave for about 5 minutes, and drain well.
- In a mixing bowl, combine broccoli, ½ cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt.
- Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
- Mix cracker crumbs with melted butter and sprinkle over the top.
- Preheat oven to 350°F and bake for 45-50 minutes until bubbly and golden brown.
