  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 tsp. salt
  • 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Thaw broccoli if frozen, warm in the microwave for about 5 minutes, and drain well.
  2. In a mixing bowl, combine broccoli, ½ cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt.
  3. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  4. Mix cracker crumbs with melted butter and sprinkle over the top.
  5. Preheat oven to 350°F and bake for 45-50 minutes until bubbly and golden brown.
