  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper; mix well.
  2. Shape mixture into uniform meatballs (about 1 inch).
  3. Heat olive oil in a skillet over medium heat. Sear meatballs until golden brown; set aside.
  4. In the same skillet, cook onion and bell peppers until softened.
  5. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; bring to a simmer.
  6. Add meatballs back into the skillet; cover and simmer for 10–12 minutes until fully cooked.
  7. Serve topped with fresh parsley.
