- 1 tablespoon vegetable oil
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 1 cup whole milk
- 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
- Parsley for garnish
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add sliced kielbasa and cook until browned on both sides (7-9 minutes). Remove and set aside.
- In the same pot, melt butter over medium heat. Add onion, carrots, garlic, salt, and pepper; cook until vegetables are softened (10-12 minutes).
- Sprinkle flour over vegetables; stir well and cook for another minute.
- Gradually add chicken broth and whole milk; stir until combined and simmer.
- Return kielbasa to the pot along with the rinsed beans; stir gently.
- Reduce heat and simmer until thickened (15-20 minutes). Garnish with parsley before serving.
