Ingredients

Scale
  • 1 lb boneless skinless chicken breasts, cut into thick strips
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning (for chicken)
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (for sauce)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Cook the rotini according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Sauté seasoned chicken strips until golden brown and cooked through. Remove and keep warm.
  3. In the same skillet, melt another tablespoon of butter and sauté minced garlic briefly. Add cream and milk, followed by Velveeta cheese; stir until melted.
  4. Incorporate mozzarella and Parmesan cheeses into the sauce, letting it thicken. Adjust seasoning as needed.
  5. Toss cooked rotini into the sauce, adding reserved pasta water if necessary for desired consistency.
  6. For the drizzle, melt the final tablespoon of butter with Cajun seasoning; drizzle over plated pasta and chicken.
