  • 3 tablespoons unsalted butter
  • 1/3 cup shallots (finely chopped)
  • 3 cloves garlic (minced)
  • 2 cups heavy whipping cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch nutmeg
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • 2 pounds frozen cut leaf spinach (thawed and squeezed dry)

Instructions

  1. Thaw the frozen spinach and squeeze out excess water.
  2. In a large pot over medium-low heat, melt the butter and sauté the shallots for about 4 minutes. Add garlic and sauté for another minute.
  3. Pour in heavy cream, salt, pepper, and nutmeg; bring to a low boil while stirring occasionally for about 10 minutes until thickened.
  4. Stir in the grated cheese until melted.
  5. Fold in the thawed spinach until well combined. Serve warm.
