  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 8 oz cream cheese
  • ¼ cup granulated sugar (for filling)
  • Additional cinnamon-sugar topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, mash bananas and mix with melted butter, brown sugar, eggs, and vanilla until combined.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually combine dry ingredients with wet mixture; stir until just mixed.
  5. For the filling, beat cream cheese with granulated sugar, egg, and vanilla until smooth.
  6. Layer half of the batter in the pan, sprinkle half of the cinnamon-sugar mix, add half of the cream cheese filling. Repeat with remaining batter and toppings.
  7. Bake for 50–60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes before transferring to a wire rack.
