  • 4 boneless skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups heavy cream
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach (or thawed frozen spinach)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear chicken breasts until golden brown on both sides, about 5 minutes per side. Remove and let rest.
  2. In the same pot, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and bring to a simmer.
  3. Stir in heavy cream, creating a rich base for the soup.
  4. Add broken lasagna noodles and Italian seasoning; simmer until noodles are al dente, about 10 minutes.
  5. Stir in spinach until wilted, approximately 2 minutes.
  6. Shred rested chicken and return it to the pot; stir well and serve hot with grated Parmesan on top.
