  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice (about 3.5 oz)
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half and half (12.5 fl oz)

Instructions

  1. Heat olive oil in a large pot over medium heat; sauté chopped onion, celery, carrots, and minced garlic until softened (about 5 minutes).
  2. Slice sausages into bite-sized pieces; add to the pot and cook until browned.
  3. Sprinkle in dried thyme and flour; stir well and cook for an additional minute.
  4. Gradually add chicken or vegetable broth while stirring; toss in bay leaves.
  5. Stir in wild rice and chunked potatoes; bring to a boil, then reduce heat. Cover and simmer for about 30 minutes or until rice is cooked.
  6. Remove bay leaves; stir in light cream or half-and-half and season with salt to taste before serving hot.
