  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 cups frozen mixed vegetables (carrots, peas, corn)
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 cup whole milk
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then sauté in a skillet over medium-high heat until golden brown (about 5 minutes per side). Remove and let rest.
  3. In the same skillet, add minced garlic and frozen mixed vegetables. Pour in chicken broth and simmer for 5 minutes.
  4. In a mixing bowl, combine flour, baking powder, salt, milk, and melted butter until just combined.
  5. Cut rested chicken into bite-sized pieces and fold into the vegetable mixture in the skillet. Spoon the mixture into the greased baking dish and dollop biscuit dough on top.
  6. Bake for 25-30 minutes until biscuits are golden brown.
