  • 1 1/4 cup all-purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold unsalted butter, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, and salt; then incorporate softened butter until clumps form. Refrigerate.
  2. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  3. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, baking powder, cinnamon, and salt.
  4. Cream cubed butter with sugars in a stand mixer until smooth; add eggs and vanilla extract.
  5. Gradually mix in dry ingredients until just combined.
  6. Scoop dough into balls and make an indent in each; fill with streusel.
  7. Bake for 8-11 minutes until edges are golden but centers remain soft.
  8. Cool on a rack and drizzle icing before serving.
