  • 1 cup sweetened shredded coconut
  • 1 cup powdered sugar
  • 23 tablespoons coconut milk (adjust for desired thickness)
  • 1 tsp coconut extract (optional)
  • Pinch of salt
  • Toasted coconut flakes for garnish (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a loaf or bundt pan.
  2. Cream softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla, optional coconut extract, and sour cream until smooth.
  5. In another bowl, whisk together flour, baking powder, and salt.
