- 2 lamb shanks
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 2 medium sweet potatoes, peeled and cut into chunks
- 1 (14 oz) can full-fat coconut cream
- 2 cups beef or chicken broth
- Juice of 1 lime
Instructions
- Heat olive oil in a heavy-bottomed pot over medium-high heat. Sear the lamb shanks until browned on all sides (5-7 minutes). Remove and set aside.
- In the same pot, sauté chopped onion, garlic, and ginger for about 3-4 minutes until fragrant.
- Stir in ground coriander, cumin, cinnamon, salt, and pepper; cook for another minute.
- Return the shanks to the pot along with sweet potato chunks. Add coconut cream and broth.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2 hours or until lamb is fork-tender.
- Stir in lime juice before serving.
