Ingredients

  • 2 lamb shanks
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 1 (14 oz) can full-fat coconut cream
  • 2 cups beef or chicken broth
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Sear the lamb shanks until browned on all sides (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté chopped onion, garlic, and ginger for about 3-4 minutes until fragrant.
  3. Stir in ground coriander, cumin, cinnamon, salt, and pepper; cook for another minute.
  4. Return the shanks to the pot along with sweet potato chunks. Add coconut cream and broth.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2 hours or until lamb is fork-tender.
  6. Stir in lime juice before serving.
