This recipe features tender chicken thighs simmered in a luscious coconut milk sauce infused with aromatic spices like curry powder, turmeric, and cumin. Paired with crispy fries and soft naan, it offers a delightful culinary experience that’s both easy to prepare and utterly satisfying.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tablespoon fresh ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 can full-fat coconut milk (14 oz)
  • ½ cup chicken broth

Instructions

  1. Prepare your ingredients by cutting the chicken into bite-sized pieces, finely chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large skillet over medium heat, add vegetable oil and sauté the chopped onion until softened (about 5 minutes). Add minced garlic and grated ginger; cook until fragrant (about 1 minute).
  3. Stir in curry powder, turmeric, cumin, and optional chili flakes. Cook for another 2-3 minutes until aromatic.
  4. Add the chicken thighs and coat them in the spice mixture until browned on all sides.
  5. Pour in coconut milk and chicken broth; stir gently to combine. Simmer on low heat for about 20-25 minutes until chicken is cooked through.
  6. Serve hot alongside crispy fries and warm naan.
