Ingredients

Scale
  • 2 lbs beef chuck or brisket, cut into large chunks
  • 1 tablespoon vegetable oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • Coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté sliced onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute.
  2. Increase heat to medium-high and brown beef chunks on all sides (3-4 minutes each). Remove from pot.
  3. Return beef to the pot, add curry powder, and stir well. Pour in enough water or broth to cover the beef and bring to a boil.
  4. Reduce heat to low, cover, and simmer gently for 2-3 hours until beef is tender.
  5. Meanwhile, rinse jasmine rice under cold water until clear and cook according to package instructions (15-20 minutes).
  6. Serve hot over jasmine rice.
