- 4 oz turkey strips, chopped
- 4 cups chicken broth
- 3/4 cup ditalini pasta
- 1 can cannellini beans
- 1 can whole plum tomatoes (28 oz)
- Fresh basil
- Oregano
- Spinach, chopped
- 2 tbsp olive oil
- 2 tbsp tomato paste
Instructions
- In a large Dutch oven over medium heat, sauté chopped turkey strips until crispy. Add olive oil along with diced carrots, celery, and onions; cook until softened.
- Create a well in the veggies for tomato paste, letting it caramelize for 3 minutes before mixing in.
- Add crushed tomatoes, basil, bay leaves, and remaining seasonings; bring to a simmer.
- Pour in chicken broth and add parmesan rind; boil then reduce heat to simmer for 15 minutes.
- Stir in cannellini beans and ditalini pasta; continue simmering for another 15 minutes until pasta is tender.
- Fold in chopped spinach and let sit covered for an additional 3 minutes before serving hot.
