  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 4 cups chicken broth
  • 3/4 cup ditalini pasta
  • 1 can cannellini beans
  • 1 can whole plum tomatoes (28 oz)
  • Fresh basil
  • Oregano
  • Spinach, chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato paste

Instructions

  1. In a large Dutch oven over medium heat, sauté chopped turkey strips until crispy. Add olive oil along with diced carrots, celery, and onions; cook until softened.
  2. Create a well in the veggies for tomato paste, letting it caramelize for 3 minutes before mixing in.
  3. Add crushed tomatoes, basil, bay leaves, and remaining seasonings; bring to a simmer.
  4. Pour in chicken broth and add parmesan rind; boil then reduce heat to simmer for 15 minutes.
  5. Stir in cannellini beans and ditalini pasta; continue simmering for another 15 minutes until pasta is tender.
  6. Fold in chopped spinach and let sit covered for an additional 3 minutes before serving hot.
