  • 1/2 cup milk or buttermilk
  • 1/4 cup fresh orange juice
  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 1/2 cups cranberries (fresh or frozen)
  • additional granulated sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In one bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, mix milk (or buttermilk), orange juice, eggs, melted butter, vanilla extract, and orange zest until smooth.
  4. Gently fold the wet ingredients into the dry mixture until combined; avoid overmixing.
  5. Fold in cranberries (frozen can be added directly).
  6. Fill muffin cups two-thirds full and sprinkle additional sugar on top.
  7. Bake for 18–22 minutes until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
