- 4–5 pound turkey breast (bone-in, skin-on)
- 1/2 cup unsalted butter (softened)
- Zest of 1 lemon
- Zest of 1 orange
- 1 tablespoon fresh rosemary (finely chopped)
- 1 tablespoon fresh thyme (finely chopped)
- 1 tablespoon fresh sage (finely chopped)
- 3 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion (quartered)
- 1 lemon (sliced)
- 1 orange (sliced)
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 350°F (175°C). Rinse the turkey breast under cold water and pat dry.
- In a mixing bowl, blend softened butter with lemon zest, orange zest, fresh herbs, minced garlic, salt, and black pepper until well combined.
- Apply the herb mixture evenly over the turkey breast—don’t forget to get some under the skin.
- Arrange quartered onion at the bottom of a roasting pan and lay lemon and orange slices on top.
- Place the turkey on top of the citrus slices; pour chicken broth into the pan.
- Roast for about 1 hour and 40 minutes or until a meat thermometer reads 165°F (74°C).
- Let rest for at least 15 minutes before slicing to retain juices.
