  • 45 pound turkey breast (bone-in, skin-on)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion (quartered)
  • 1 lemon (sliced)
  • 1 orange (sliced)
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 350°F (175°C). Rinse the turkey breast under cold water and pat dry.
  2. In a mixing bowl, blend softened butter with lemon zest, orange zest, fresh herbs, minced garlic, salt, and black pepper until well combined.
  3. Apply the herb mixture evenly over the turkey breast—don’t forget to get some under the skin.
  4. Arrange quartered onion at the bottom of a roasting pan and lay lemon and orange slices on top.
  5. Place the turkey on top of the citrus slices; pour chicken broth into the pan.
  6. Roast for about 1 hour and 40 minutes or until a meat thermometer reads 165°F (74°C).
  7. Let rest for at least 15 minutes before slicing to retain juices.
