  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • For the cinnamon filling: ½ cup unsalted butter, softened, ½ cup brown sugar, 2 tbsp ground cinnamon
  • For the cream cheese glaze: 4 oz cream cheese, softened, ½ cup powdered sugar, milk (as needed), ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or cooking spray.
  2. In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix melted butter, milk, egg, and vanilla until well combined.
  3. Combine wet and dry ingredients gently until just mixed; avoid overmixing.
  4. For the filling, mix softened butter, brown sugar, and cinnamon until smooth.
  5. Fill each muffin cup halfway with batter; add a spoonful of cinnamon filling and top with remaining batter. Swirl lightly with a toothpick for marbled effect.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool slightly before glazing.
  7. For the glaze, beat cream cheese until smooth; add powdered sugar and milk to achieve drizzling consistency. Drizzle over cooled muffins.
