Ingredients
- 3 overripe mashed bananas
- 4 tablespoons melted vegan butter
- ¾ cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour (regular or gluten-free)
- 1 cup old-fashioned rolled oats
- For the cinnamon swirl: 4 tablespoons melted vegan butter, ⅓ cup light brown sugar, 2 tablespoons cinnamon
- For the frosting: ¾ cup powdered sugar, 2 tablespoons melted vegan butter, 2 ounces softened vegan cream cheese
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
- In another bowl, mix together baking powder, baking soda, cinnamon, salt, flour, and oats. Gradually add to the wet mixture until just combined.
- Pour half of the batter into the prepared loaf pan. In another bowl, mix melted vegan butter, brown sugar, and cinnamon for the swirl. Spread half of this mixture over the batter.
- Add the remaining batter and top with the rest of the cinnamon swirl mixture.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Allow to cool before frosting with a mixture of powdered sugar, melted vegan butter, and softened cream cheese.
