  • 2 teaspoons vanilla extract

  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled, cored, and chopped into small pieces)
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream together softened butter, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually mix in the dry ingredients and milk until combined.
  6. In another bowl, combine chopped apples with light brown sugar and cinnamon.
  7. Layer half the batter in the prepared pan, followed by half the apple mixture; swirl gently.
  8. Top with remaining batter and apple mixture; sprinkle with cinnamon-sugar topping.
  9. Bake for 45-55 minutes or until a toothpick comes out clean.
  10. Cool slightly before glazing with a mixture of confectioners' sugar, cinnamon, and water.
