  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic (minced)
  • Salt and freshly ground black pepper
  • 1 1/2 medium avocados (ripe but semi-firm, diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed under cool water)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Marinate the chicken by mixing lime zest, lime juice, olive oil, honey, cilantro, garlic, salt, and pepper in a bowl. Let it sit for at least 30 minutes.
  2. Preheat your grill or grill pan over medium-high heat, brushing it with olive oil.
  3. Grill the marinated chicken for about 5 minutes on each side or until it reaches an internal temperature of 165°F (75°C).
  4. Prepare the avocado salsa by mixing diced avocados, tomatoes, rinsed red onion, minced garlic, and lime juice in another bowl. Season with salt and pepper.
  5. Serve sliced chicken topped with avocado salsa and garnish with additional cilantro or parsley if desired.
