- 1/2 cup roasted salted pistachios, coarsely chopped
- 1 box pistachio instant pudding mix (3.4 oz box)
- 1/3 cup milk
- 5 tbsp unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1/4 tsp almond extract
- 1/2 cup roasted salted pistachios, coarsely chopped
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt half of the chopped dark chocolate with unsalted butter until smooth.
- In a separate bowl, whisk eggs, granulated sugar, and vanilla extract. Combine with melted chocolate mixture.
- Mix all-purpose flour, baking powder, and salt in another bowl, then gradually add to wet ingredients.
- Fold in coarsely chopped pistachios.
- Drop rounded dough onto baking sheet and bake for about 10 minutes.
- Cool on the baking sheet for a few minutes before transferring to a cooling rack.
- Prepare frosting by mixing pudding mix, milk, softened butter, powdered sugar, vanilla extract, almond extract, and remaining chopped pistachios.
- Spread frosting between two cookies to assemble sandwich cookies.
