  • 2 medium yellow onions, sliced into wedges
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 cup beef broth or water
  • 1/2 tsp sugar

Instructions

  1. Begin by gathering all your ingredients. Slice the beef sirloin against the grain into thin strips. Mince the garlic and grate the ginger. Slice the onions into wedges.
  2. In a bowl, combine the sliced beef with soy sauce, oyster sauce, hoisin sauce, cornstarch, apple vinegar (or dry apple juice), sesame oil, and sugar. Mix well to ensure all pieces are coated evenly. Let it marinate for about 15 minutes.
  3. Heat your wok or large skillet over medium-high heat. Add vegetable oil once hot. Swirl to coat evenly.
  4. Add the marinated beef to the hot wok in a single layer. Allow it to sear without stirring for about 1-2 minutes until browned. Then stir-fry until just cooked through (about another 2 minutes). Remove from the wok and set aside.
  5. In the same wok, add more oil if needed. Toss in the minced garlic, grated ginger, and sliced onions. Stir-fry until onions are tender but still crispy (about 3-4 minutes).
  6. Return the cooked beef to the wok along with any juices from the plate. Add beef broth or water to deglaze, scraping up any browned bits from the bottom of the pan. Stir everything together for an additional minute until heated through.
